Christmas In July!




Last Christmas I was in such a mood to bake! And not just bake my regular cookies, chocolate and fudge recipes, but to bake something new.

Yes, I'm ready to spend the day baking!!



My sister is the manager at a local gas station and as the manager likes to do something special for her staff. I knew she'd already planned her gifts, but I wanted to make something for the day she was going to give out the gifts...sort of have a mini Christmas party!

As I was in the mood to make some interesting cupcakes...that's what she was going to bring to this mini party.

It was so fun and easy I plan on doing something similar in the future for birthday parties and other activities! Here's what I came up with!



These were the ones she took to work to share with her employees.


Merry Christmas in July! Is it time to listen to Christmas music? Ooops....too late....I was listening to Christmas music in April- It's just too good to limit to one month!

The Great Cake Fight




Quite simply it all started out with a devious plan for (Cue the evil laugh please) WAHAHAHAHA. We just completed a successful birthday celebration and had politely bid our guests goodbye. I began to get excited because my almighty, super awesome plan would be put into effect.

The plan was simple, get the piece of cake-the perfect size would fit right into the palm of my hand and have plenty of frosting and filling for maximum effect. Then I would then proceed to sneak up behind my unsuspecting sister and stealthily smash and squish that perfect piece of cake right into her lovely face! How could it fail?

Well, first of all she knew something was up…I can’t help it, just can’t keep a straight face when I have a devious plan. (Shaking head on frustration!) But I continued to proceed with hopes that I could pull it off.

I picked out the perfect piece of sweet deliciousness and even placed extra frosting on top. I walked slowly and stealthily behind her, lifted the cake and then….well, that’s when the plan all fell apart.
She saw that cake coming towards her and quicker than speedy Gonzales dodged out of the way. I lost my balance and almost fell on the dog. All the while my hand, that was holding the cake, continued to gain momentum and as my wobbly legs gained their balance…the cake exploded…..in my face. Yes…the cake “I” was holding. -_- 

My brother, who was in on the plan, but decided to be an “innocent” by stander, start laughing uncontrollably while stuttering out, “HAHAHAHA, how could that happen! You smashed the cake into your own face! HAHAHAHA!”

My eyes began to burn with mock anger, seeking retribution on the original target- who had so easily eluded my cake attack, or perhaps, instead of anger, it was the cake and sticky frosting dripping down into my eye…

Not one to claim defeat I clung to the bits of cake left in my hand when I’d inadvertently missed the intended target. But my sister’s much longer arms and taller legs kept her from receiving a full dose of the cake while I continued to get pummeled! 

We danced around the dogs, who were trying to eat the cake, frosting and peanut butter filling that fell to the floor, when my brother, probably deciding that I was outmatched, decided to try and hold her down. But she fought like a wild cat, clawing at my face, smashing cake further into my hair and all over the place!



The cake fighting continued from our kitchen and into my brother’s room- which is right next to the kitchen. When everything finally settled down we were all laughing so hard and cake was everywhere…except for the intended target! 

So I’m standing there- my whole face felt like it was getting a skin tightening spa treatment, from all the sugar and peanut butter filling on my face, my hair was plastered  to my head, like I’d used too much hairspray, and I was certain there was at least a black eye or a bloody nose about to happen. She still stood with only a teeny, tiny spot of frosting on her…see this is why I don’t pull pranks. I end up getting it worse than the person I’m supposed to be pranking! 

My brother, who was completely untouched my any cake, wished to chronicle the end result of the fight and decided to take a picture. Seeing the opportune moment to be a BIG help to my dear sister, I jumped in and quickly offered, “Let me help you make it look good!”



Somehow through all the mayhem, I’d managed to save a small handful of cake and frosting for the perfect moment. This was it! At last I would be able get some cake, peanut butter filling and buttercream frosting applied to her face! And boy did I rub it in! Ah, sweet victory!

The kitchen and my brother’s room ended up with cake crumbs and frosting all over the place- but our in home vacuum cleaners- also known as our three dogs, helped with the cleanup. We had a super great time- boy was it fun!




What I’ve learned is that sometimes you have to let go, throw all caution to the wind and just do it. If it doesn’t work out like you planned, keep going you never know what kind of memories you will create. :D 
The only thing I’m wondering now: is peanut butter a good exfoliating treatment? Because my face feels amazing! ;)

Cookie day!


At last the day has arrived! It's time to get oodles and oodles of delicious cookie making going! What I have planned is my cut out cookies-with loads of butter-cream frosting and sparkly sprinkles, the ultimate chocolate chip cookies, white velvet cookies-also with frosting and sprinkles, rice krispsy treats and apple bread.

I did get a a head start yesterday by making Cookies & Cream Fudge-which is: Out. Of. This. World. DELICIOUS!!!! Imagine Oreo cookies with just the right amount of cookie and dream....I mean cream.

It's very simple to make and a wonderful treat of you-and if you decide to let share-your family and friends to enjoy!

Cookies & Cream Fudge

Cookies and Cream Fudge


  • 3 cups granulated sugar
  • 3/4 cup (1 1/2 sticks) butter or margarine
  • 2/3 cup (5 fl.-oz. can) Evaporated Milk
  • 2 cups (12-oz. pkg.) White morsels
  • 1 jar (7 oz.) marshmallow creme
  • 1/2 cup finely crushed cream-filled chocolate sandwich cookies
  • 1 teaspoon vanilla extract (optional)
  • 1 cup crumbled cream-filled chocolate sandwich cookies


Directions


LINE 9-inch-square baking pan with foil.

COMBINE sugar, butter and evaporated milk in medium, heavy-duty saucepan. Bring to a full rolling boil, stirring constantly. Boil, stirring constantly, for 3 minutes. Remove from heat.

STIR in morsels, marshmallow crème, finely crushed cookies and vanilla extract. Pour into prepared pan. Sprinkle crumbled cookies on top. Gently swirl cookies into fudge using a knife without touching bottom of pan. Refrigerate for 1 hour or until firm. Lift from pan; remove foil. Cut into 48 pieces. Store in airtight container in refrigerator. 

 Tip:

The 9 inch pan makes a super think fudge so this year I not only doubled the recipe, but I poured the fudge into 2- 15 inch cookies sheets. This made the perfect thickness and allowed for cutting the perfect sized piece. Trust me...this is one rich fudge-you'll want it to me a tad thinner than it would be by putting it in a smaller pan.

Ultimate Cookie


One more day and then I will be in the midst of a baking frenzy! While I am looking forward to it I know it will be an exhausting day! But I already have my night planned for the perfect chill...a night at the movies with friends, popcorn and the new Hobbit film!

Here is one of the cookie recipes I will be making tomorrow. I love this recipe! You can make HUGE cookies and they turn out perfect! There have been days where I make a batch and get 24 large cookies. I eat like, 2 or 3. My brother comes home between 4-6 from work and all but a few are gone by the time I go to bed at 9:30/10:00 pm.

Now whenever I tell anyone that these are THE ultimate chocolate chip cookies...they roll their eyes. But they always end up asking for the recipe and agreeing with me! Try them and you may find your new favorite chocolate chip cookie!

THE ULTIMATE CHOCOLATE CHIP COOKIE
Makes 2 dozen large cookies

1 cup butter, melted (no substitutes)
¾ cup white sugar
¾ cup brown sugar
2 eggs
1 tablespoon vanilla
2 ½ cups flour
1 teaspoon baking soda
1 teaspoon salt
2-3 cups chocolate chips*

Stir melted butter and sugars; mix well. Stir in eggs and vanilla. Combine flour, soda and salt and stir into butter mixture. Stir in chocolate chips. Using an ice cream scoop, drop dough onto ungreased baking sheet, two inches apart. 

Bake in 325* oven for 12-13 minutes. DO NOT OVERBAKE! Let rest on cookie sheet 5 minutes, then transfer to wire racks.


Tips:


~*you can use any kind of chocolate-I've used chunks and I know of
 some people who've used cut up chocolate bars. 
 ~Mix by hand, do NOT use a mixer
~Only use a plastic or metal bowl, do NOT use glass
~MUST use real sugar and white flour! :-)
~It may look like the cookie isn't done when it comes out of the oven, but as long as you don't have it too thick it will be fine...be sure to let it sit for 5 minutes!

Holiday Fun!


Every year we all have traditions around the holidays that make it special for our family. For my family, there are movies, shopping, wrapping gifts, Christmas music and all sorts of homemade goodies!

I've already begun watching Christmas movies-including my favorite White Christmas-which generally is viewed at least four times from Thanksgiving to Christmas. I've got all my shopping done and will soon begin wrapping everything-which to me is even more fun than shopping!

The final piece of the holiday fun, before the actual holidays, is baking loads and loads of cookies! I've actually had to hold myself back from starting as I've set aside this Thursday as the day to do that project. And boy is it a project!

I've got at least 4-5 different goodies I'm planning on  making and then I have some friends coming over to assist in making some of their own recipes as well. Overall, I should have plenty to share with friends and family.

Here is our absolute favorite cut-out cookies recipe. One of the reasons I love it so much is that you don't have to refrigerate it. Yay! We've used it in our family since I was a little girl and trust me...it is the best! 


Cut-out Cookies

1 Cup Butter
1 Cup Sugar
1 Egg
3 Tbsp. Milk
1 Tsp Vanilla
3 Cups Flour
1 1/2 Tsp Baking Powder
1/2 Tsp Salt

Preheat over to 400*.

In mixing bowl cream butter and sugar. Beat in egg, milk, vanilla. Stir in flour, baking powder and salt until well mixed. Roll out dough and cut. Bake 5-8 minutes.

 It also taste delicious with this frosting!

Vanilla Butter Frosting

3 Cups Confectioner Sugar

1/3 Cup Butter (5 1/3 Tbsp)

1 1/2 Tsp Vanilla

About 2 Tbsp Milk

 Blend butter and sugar. Stir in vanilla and milk until frosting is smooth and of spreading consistency.

Use food coloring if desired.

60 And Loving It!

This month has been long awaited for a momentous occasion: mom's 60th birthday!  About two years ago she started getting really excited about turning sixty-so I wanted to do something special as it seems like the big-0 years are pretty important.  :-)

So we planned a surprise party at His Thousand Hills!  Mom knew we would probably try to do something, but she ended up being completely surprised as birth date is October 9th, and we had the party on September 29th. 

She was so surprised and started cry right away! Good thing the tissues were handy!


The decor was lavender-because her favorite flower is the lilac and it's funny because I didn't think of it until after we'd plan to do lilac scented candles, but her wedding colors where also purple.  Mom would have celebrated her 28th wedding anniversary the week before the party.


Mom loves hats so we had the ladies wear a fancy hat to the party-which is why mom and I have a hat on.  But here's the whole family minus Mike-who is overseas still.


This was taken yesterday on mom's actual b-day.  She wore that shirt all day where ever we went!


This coming year is going to be an amazing year for my mom and I'm so grateful that God allowed me to have a mom like her!

Fun~Friends~Fellowship

This year has been so busy that certain family members felt we just couldn't squeeze in our yearly fun trip to an amusement park: Knoebels.  However, we were able to change their minds and went just this past weekend!  Knoebels is about 1 1/2 - 2 hours away, but when you go with friends that time seems to fly by and before you know it you're enjoying the familiar thrills from fast rides and spinning heads from the rides that go round and round.
Although I’m not a roller coaster fan, everyone was trying to convince me to go on one…it's not really my thing...maybe one day! ;-)

The highlight for me was the time I was able to spend with my sister!  She doesn’t often get time off so it was nice to have her around for a full day to just have fun!

Mom decided that she didn’t want to be with a bunch of crazy youngsters and opted instead to spend the day with a friend. They went shopping, ate out and sewed clothes…their favorite thing to do!

With fall just around the corner, Dan is getting ready for hunting season...he's going to try archery for the first time this year!

 The weather has been getting cooler and the leaves are starting to turn...which means that we are definitely getting into our fall season!  It's nice to have things be cooler than in the hot heat of summer, but I'm still holding out on bringing my winter clothes out!  Not quite ready to bundle up yet!
